Eggs Chilaquiles

Chilaquiles is a classic Mexican breakfast with simple ingredients that can be thrown together in just a few minutes. I take good quality corn chips, my favorite roasted tomato salsa, and scrambled eggs in a large saute pan. Toss them together until all of the chips are coated in salsa then top with sour cream, avocado, and queso fresco(or cotija cheese).

Cheesy Egg + Veggie Tacos

This is a super easy recipe you can throw together within just 10 minutes. I typically have all of these ingredients on hand during the summer but you can use nearly any vegetable you'd like as a substitution.

Recipe: Cheesy Egg & Veggie Tacos (serves 2)
1/2 of a large zucchini, diced
3 medium-large cremini mushrooms, sliced thinly
olive oil
salt & pepper to taste

For the eggs:
4 eggs, beaten until smooth
2 tablespoons sharp cheddar cheese
butter for greasing pan

corn tortillas (5-6)
sour cream

Heat a small saute pan over medium high heat. Add about 2 teaspoons of olive oil(just eyeball it). Once the oil is heated, add zucchini, mushrooms, salt, and pepper to taste. Saute about 5 minutes until veggies are soft and starting to caramelize, remove from heat. In a separate non-stick pan over medium-low heat, melt about 1/2 tablespoon of butter. Add eggs and move them around the pan with a spatula until softly scrambled. Remove from heat and add cheese. Gently fold cheese into the warm eggs. To serve, add to your eggs, then top with veggies, sour cream, and salsa. Enjoy!

TRAVEL: Whitebait Fritters in New Zealand

Whitebait fritters are somewhat of a delicacy in New Zealand. On our last trip there, I was lucky enough to try some homemade on buttered toast with a perfectly cooked egg. It's made with tiny fish in an egg batter that's pan fried until golden brown. It's definitely something a bit different for breakfast. ;) Here's a basic recipe if you're feeling adventurous and you're able to get your hands on some whitebait!

Coconut Granola

Recipe: Coconut Granola (makes a little over 2.5 cups)
1 1/2 cups whole rolled oats
1/2 cup sliced almonds
1/3 cup walnut pieces
1/4 cup unsweetened shredded coconut
1/4 cup brown sugar
3 Tablespoons honey (dark, amber honey tastes best)
2 Tablespoons coconut oil(heated until liquid)
1 Tablespoon raw sesame seeds
1/4 tsp salt

Preheat oven to 250 degrees. Mix all ingredients in a large bowl and make sure everything is evenly coated with the sticky honey/coconut oil mixture. Spread evenly on 1 large baking sheet. Bake for 1 hour to 1 hour and 10 minutes, turning the granola every 15 minutes to make sure it doesn't bake unevenly. Take out once golden brown and store for up to 2 weeks in mason jars.

Blueberry Blender Waffles

This weekend we are visiting my Godparents(who happen to be my Aunt/Uncle) in Davis, Ca. My Uncle, 'Dan the Man,' is the inspiration for this quick and easy recipe. Whenever we stay the night, we are always treated to fresh waffles and farmer's market fruit in the morning. They're serious #hostgoals by spoiling us. The best part about this recipe is the blueberries in the batter(hidden antioxidants!). It's also made by just dropping everything into a blender so it's super quick and easy!

Recipe: Blueberry Blender Waffles (Inspired by Uncle Dan) Serves 4-6 people depending on your waffle iron

1 cup fresh blueberries
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Preheat waffle iron(s). Place eggs and blueberries in blender and pulse until combined. Add flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, and blend just until smooth.
Pour mix onto hot waffle iron. Cook until golden brown. A key tip to know when it's done is when the iron stops steaming. Keep waffles warm in a 200 degree oven. Serve hot.

Whole Wheat Lemon-Blueberry Muffins with Brown Sugar Crumble

Recipe: Whole Wheat Lemon-Blueberry Muffins with Brown Sugar Crumble
1 1/2 cups whole-wheat flour
3/4 cup white sugar
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
zest of 1 lemon
2/3 cup milk
1 cup fresh blueberries

Crumble Ingredients:
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed, room temperature
1 teaspoons ground cinnamon

Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and  milk. Pour this into the flour mixture. Add lemon zest then gently, fold in blueberries. Fill muffin cups 1/2 way up, and sprinkle with crumb topping mixture.

To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 teaspoons cinnamon. Mix with fork(or fingers), and sprinkle evenly over muffins before baking.

Bake for 12 to 18 minutes in the preheated oven, or until a toothpick comes out clean.

We just got back from a week long vacation in Maui and I'm having serious post-holiday blues. Luckily, I brought back a few treasures to ease me back into the work week. While we were there, we spent some time in Kula(also known as Up Country). We sampled some of their well known and ridiculously sweet strawberries and black raspberries. I was able to get my hands on these black gems to take back to our condo and enjoy for our usual granola & yogurt breakfast. Fact: eating healthy for breakfast leaves several extra calories for pina coladas and mai tais.

Blueberry + Peanut Butter Smoothie

Recipe for Blueberry-Peanut Butter Smoothie(serves 1) 
1 cup fresh blueberries
1/4 cup greek yogurt
1.5 tablespoons creamy peanut butter
1/2 cup ice(about 5 cubes)
1 teaspoon honey(more to taste)

Place all ingredients into blender. Blend until completely smooth. Serve immediately.
