Blueberry Blender Waffles

This weekend we are visiting my Godparents(who happen to be my Aunt/Uncle) in Davis, Ca. My Uncle, 'Dan the Man,' is the inspiration for this quick and easy recipe. Whenever we stay the night, we are always treated to fresh waffles and farmer's market fruit in the morning. They're serious #hostgoals by spoiling us. The best part about this recipe is the blueberries in the batter(hidden antioxidants!). It's also made by just dropping everything into a blender so it's super quick and easy!

Recipe: Blueberry Blender Waffles (Inspired by Uncle Dan) Serves 4-6 people depending on your waffle iron

1 cup fresh blueberries
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Preheat waffle iron(s). Place eggs and blueberries in blender and pulse until combined. Add flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, and blend just until smooth.
Pour mix onto hot waffle iron. Cook until golden brown. A key tip to know when it's done is when the iron stops steaming. Keep waffles warm in a 200 degree oven. Serve hot.
