Cheesy Egg + Veggie Tacos

This is a super easy recipe you can throw together within just 10 minutes. I typically have all of these ingredients on hand during the summer but you can use nearly any vegetable you'd like as a substitution.

Recipe: Cheesy Egg & Veggie Tacos (serves 2)
1/2 of a large zucchini, diced
3 medium-large cremini mushrooms, sliced thinly
olive oil
salt & pepper to taste

For the eggs:
4 eggs, beaten until smooth
2 tablespoons sharp cheddar cheese
butter for greasing pan

corn tortillas (5-6)
sour cream

Heat a small saute pan over medium high heat. Add about 2 teaspoons of olive oil(just eyeball it). Once the oil is heated, add zucchini, mushrooms, salt, and pepper to taste. Saute about 5 minutes until veggies are soft and starting to caramelize, remove from heat. In a separate non-stick pan over medium-low heat, melt about 1/2 tablespoon of butter. Add eggs and move them around the pan with a spatula until softly scrambled. Remove from heat and add cheese. Gently fold cheese into the warm eggs. To serve, add to your eggs, then top with veggies, sour cream, and salsa. Enjoy!
