Coconut Granola

Recipe: Coconut Granola (makes a little over 2.5 cups)
1 1/2 cups whole rolled oats
1/2 cup sliced almonds
1/3 cup walnut pieces
1/4 cup unsweetened shredded coconut
1/4 cup brown sugar
3 Tablespoons honey (dark, amber honey tastes best)
2 Tablespoons coconut oil(heated until liquid)
1 Tablespoon raw sesame seeds
1/4 tsp salt

Preheat oven to 250 degrees. Mix all ingredients in a large bowl and make sure everything is evenly coated with the sticky honey/coconut oil mixture. Spread evenly on 1 large baking sheet. Bake for 1 hour to 1 hour and 10 minutes, turning the granola every 15 minutes to make sure it doesn't bake unevenly. Take out once golden brown and store for up to 2 weeks in mason jars.
