Chilaquiles is a classic Mexican breakfast with simple ingredients that can be thrown together in just a few minutes. I take good quality corn chips, my favorite roasted tomato salsa, and scrambled eggs in a large saute pan. Toss them together until all of the chips are coated in salsa then top with sour cream, avocado, and queso fresco(or cotija cheese).
