Leftovers are arguably the best part of the Thanksgiving meal. We've already had the usual turkey-cranberry-stuffing sandwiches(amazing!). This morning, I thought I would use the remaining potatoes and stuffing in a quick take on a bubble and squeak!
Bubble and squeak is a British classic using leftovers from a roast dinner. It can include anything from roasted vegetables to cabbage. Here I've taken all the good stuff from our Thanksgiving dinner: mashed potatoes, stuffing, peas, and some chopped turkey. Top it with an egg and call it breakfast! Thanksgiving Leftovers Bubble & Squeak (serves 2)
Ingredients:
3/4 cup stuffing, broken into chunks
3/4 cup mashed potatoes
1/4 cup peas
1/2 cup pulled turkey pieces (fully cooked)
1 egg, beaten
2 rounded tablespoons all purpose flour
salt and pepper to taste
1 tablespoon butter(for pan)
Toppings:
eggs for frying
pomegranate seeds (optional)
cranberry sauce(optional)
Directions:
Add all ingredients(except butter) to a large mixing bowl. Mix with a spoon until just combined. Form into patties of your desired size(we made 3 large patties with this mixture). The mixture may be wet but don't fret, they will come together once fried! Heat a large non-stick pan over medium heat. Add butter then patties to the pan. Cook 3-4 minutes per side, making sure they don't get too much color but the middles look heated through. Top with a fried egg and a garnish of your choosing. Cranberry sauce or fresh pomegranates are lovely choices. Enjoy!
